High Fibre Prebiotic Burrito Bowl (Plant-Based, Meal Prep Friendly)

This prebiotic burrito bowl is a simple, wholefood meal that comes together in under 15 minutes, making it one of the most practical options for meal prep lunches throughout the week. Each serve provides approximately 17g of plant-based protein and 13g of fibre, making it a filling and balanced meal.


Black beans are a rich source of prebiotic fibre, which feeds the beneficial bacteria in your gut and supports a healthy gut microbiome. They are also a good plant protein option. Combined with sweet potato, avocado, tomato and leafy greens, this bowl contributes approximately 5 plant points per serve


MEAL PREP TIP:

Prepare the beans and sweet potato in advance and store them separately in the fridge for up to 3 days. Assemble your bowl fresh at lunchtime and make the smashed avocado just before eating.


PREBIOTIC BURRITO BOWL RECIPE

Makes 3 serves


INGREDIENTS

  • 1 x 400g tin black beans, drained and rinsed

  • 1 tablespoon taco seasoning (we love the Mingle brand)

  • 1 medium sweet potato, peeled and cubed

  • 3 cups cos or iceberg lettuce, shredded

  • 1 medium tomato, diced

  • 1/2 red onion, finely diced (optional)

  • 1/2 avocado

  • Juice of 1/2 lime

  • 20g Corn chips, to serve


METHOD


  1. Steam sweet potato in the microwave for 5 to 6 minutes or until tender. Set aside.

  2. Drain and rinse black beans, then toss with taco seasoning until well coated.

  3. Mash avocado with lime juice and a pinch of salt.

  4. Divide lettuce between three bowls and top with black beans, sweet potato, tomato and red onion. Add a spoonful of smashed avocado and corn chips to serve.
